Agave syrup is a natural sugar extracted from the Mexican agave (tequilana) fruit.
It has a low glycemic index (4 times lower than sugar) and is therefore ideal for people with diabetes or who wish to monitor their sugar intake. It is also less caloric.
Agave syrup is rich in iron (facilitates the transport of oxygen in the blood), calcium (strengthens the bones), potassium (participates in the proper functioning of muscles, heart and neurons), magnesium (regulates the rate blood sugar, reduces stress and anxiety), silica (prevents decalcification and osteoporosis).
It is suitable for vegetarians/ vegan and GMO free.

It is ideal as a sugar substitute and can be used to replace honey but also on fruit salads, in yogurt, cottage cheese or in baking (add 1/3 less than the recommended amount of sugar and adjust the amount of liquid). It caramelizes, so you can use it on a tarte tatin for example. It dissolves well and is therefore easily used for hot and cold drinks.
